CREAMY CAJUN CHICKEN PASTA Empty CREAMY CAJUN CHICKEN PASTA

Serves 2 - 5 points per serving

1 Chicken Breast, Diced
250ml Lite Evaporated Milk
1 Large Onion, diced
150g Mushrooms, sliced
1 Red Pepper, Diced
1 Tablespoon Light Soy Sauce
Cajun Spices to taste
125g dry pasta

1. Spray pan with low fat cooking spray and add diced onion. cook until soft, add the chicken for about 3-5mins or until starting to brown.
2. Meanwhile cook the pasta and set aside.
3. Add pepper and mushrooms to chicken, when soft add the soy sauce and the cajun spices (as much as required for own taste), then cook for around 5 mins
4. Then add the evaporated milk and simmer on a low heat for a minute.
5. Add the drained pasta and then serve

this is gorgeous
