Baked Pilau Rice - 2.5 Points Empty Baked Pilau Rice - 2.5 Points

Ingredients
1 spray low-fat cooking spray
1 small onion(s), finely chopped
2 clove garlic, crushed
400 g dried rice, basmati variety
1 portion lemon(s), pared zest
3 portion bay leaf, fresh or dried
8 portion cardamom pods, split
1/2 teaspoon cumin seeds
3 portion whole or ground cloves
1/2 teaspoon turmeric
900 ml fresh stock, vegatable
3 sprig fresh coriander

Instructions
1. Preheat the oven to 180°C/350°F/Gas Mark 4.
2. Spray a large flameproof casserole dish that has a tight-fitting lid with low fat cooking spray. Heat on the hob, then add the onion and garlic. Cook over a low heat until soft, but not brown.
3. Remove from the heat and add the rice, lemon zest, bay leaves, cardamom pods, cumin seeds, cloves, turmeric and vegetable stock. Stir well, then cover with the lid. Transfer to the middle shelf of the oven and bake for 25 minutes.
4. Remove the casserole dish from the oven. Let it stand for 5 minutes, without removing the lid. Serve, garnished with sprigs of coriander.
