Ingredients
1 medium onion(s), sliced into wedges
2 portion leek(s), trimmed and sliced
2 medium red green or yellow pepper(s), (red and yellow)
15 spray low-fat cooking spray
1 pinch salt, to taste
1 serving pepper
2 sprig fresh rosemary, (or thyme)(or 1 tsp dried)
600 g chicken breast, uncooked, skinless, (4 pieces)
1 tablespoon vinegar, balsamic

Instructions
1. Preheat oven to Gas Mark 5/190°C/375°F.
2. Put onion, leeks and peppers into a roasting dish. Add cooking spray and toss to coat. Add herbs, season with salt and pepper.
3. Lay chicken breasts on top of the vegetables. Sprinkle with balsamic vinegar, season and transfer to oven.
4. Roast for 25 - 30 minutes, until chicken is browned and cooked, and vegetables are tender.
